Zucchini Caprese, or Caprese Zoodles

My experience with spiralizer started with this recipe a few years ago. It has become a staple in our family. If you don’t have a spiralizer in your kitchen, just thinly slice zucchini lengthwise to form spaghetti-like strands. It will take longer but works for the first-timers. If you like this recipes and decide to include it into your meal plan, invest in a good spiralizer. It saves a ton of time. You can start with a simple one like this or more advanced by OXO.

Zucchini Caprese
I love to make this warm salad/pasta for dinner. 20 min to cook and only 355 cal per serving. Also vegetarian and packed with all good stuff for your body.
Ingredients
- 3 tbsp olive oil
- 2 lbs small zucchini, spiralized
- 12 oz ripe tomatoes, chopped
- 8 oz fresh mozzarella
- 1/2 cup fresh basil leaves, torn
- 2 cloves garlic, crushed with press
- 2 tbsp capers, chopped
- 1/4 cup pine nuts
Instructions
- Heat the oil in a wok or 12-in skillet until hot.
- Add spiralized zucchini and cook 1-2 min, stirring. Remove from heat, transfer to a salad bowl and set aside.
- Add chopped tomatoes to zucchini bowl.
- Cut mozzarella into 1/2 cubes, add to the bowl with zucchini.
- Add basil leaves and garlic to the bowl.
- Add 1/2 tsp. of salt, or to taste
- Gently toss to combine and sprinkle with pine nuts.
- Serve immediately and enjoy!
