Quick side salad named after a Russian cuisine staple – Borscht, because of its color and its main ingredient – cabbage. This colorful salad is sure to brighten up your dinner table. Serve it with meat, or as a coleslaw alternative.  Delicious!

Color, easiness of preparation and taste are not the only strong points of this salad. It is also packed with healthy stuff. E.g. red cabbage is a great source of vitamin C, fights inflammation and aids healthy bones. While beetroot is a good source of iron and folate (natural folic acid), it is rich in antioxidants. Recent studies proved beetroot lowers blood pressure and boosts exercise performance, which make this dish a good snack before an exercise session.

Quick side salad named after a Russian cuisine staple - Borscht. This colorful salad is sure to brighten up your dinner table.

Ingredients

  • 8 oz shredded red cabbage
  • 1/2 small red onion, thinly sliced
  • 2 raw beetroots, grated
  • 1 Tbs capers
  • 2 Tbs olive oil
  • 1 tsp Balsamic vinegar
  • Salt, pepper to taste
  • 6 Tbs sour cream
  • 1 bunch parsley

Instructions

  1. In a salad bowl combine together first 4 ingredients through capers.
  2. Add olive oil, balsamic vinegar and salt + pepper.
  3. Mix well and leave at room temperature for 20-30 minutes.
  4. To serve place salad on a plate, add 1 Tbs sour cream to the plate next to the salad and parsley.
  5. Enjoy!
